I know what people mean when they refer to 'The South of France'; it's more than a beautiful place, it's a feeling. I fell in love with this land of the purple bougainvillea in a heart beat. The water is so crystal clear blue and at the end of May when we went, it was perfectly crisp. We stayed in Eze bord du mer, but you could stay in any number of spots along the coast and be happy...overjoyed, even. Stay in a place up in the hills if you can, so you can have that quiet away from the beach and get the best that this place has to offer. You'll need to rent a car, which is quite expensive, but worth it; we went with Hertz from the Nice airport. Go to Eden at Plage Mala to treat yourself for the day on a sun bed with ice cold rosé- I didn't even like rosé until this trip, but in this region of France it is magnifique!
Go to Paloma at St. Jean Cap Ferrat for another day of lounging (the view is spectacular) and get the lobster if you want to be fancy. On a less frivolous note, you can eat a baguette every day, like I did...every. single. day. We had a dinner out at L'Auberge de la Croix du Pape which we stumbled upon on a drive and I just loved the look of it- the food was incredible. You can walk to Monaco along a beautiful coastal walk, stopping along the way to admire the view, giant cacti and parks with men playing boules. In Monaco, the Museé Océanographique is not to be missed - it is so 'The Life Aquatic', it's not even funny!
Stay: Anywhere along the coast from Nice to Beausoleil (hint: get a car, so you can visit all the beaches along the way- day trips are so easy around here!).

Do: Get the sun beds at Eden Plage Mala, Paloma & Anjuna - that's three days of luxurious sunning with beautiful vistas.
Eat: Une baguette mixte (Ham and Cheese baguette)
Drink: Rosé
